Is This Unexpected Ingredient the Secret to Perfect Pumpkin Pie?

If you’re planning to serve pumpkin pie this Thanksgiving, there might be a secret ingredient that can make it even smoother.

In a twist, sour cream is the way to go when it comes to getting the smoothest and tastiest pumpkin pie. 

The recipe in question is from Epicurious, but it’s Woman’s World writer Alexandria Brooks who put it to the test and declared it the perfect way to blend the sweetness of the pie with a bit of a creamy, tangy flavor for perfect balance.

According to the recipe, you warm the sour cream first, placing it in a double boiler for about 20 minutes on low. Then, in a separate bowl, mix your filling ingredients. Once those ingredients are combined, you add the warmed sour cream and blend until smooth. Follow the rest of the recipe (which unfortunately does involve whisking some egg whites for all us lazy bakers), and bake.

Brooks reports that adding the sour cream gives the pie a more mousse-like texture and adds some tartness.

“It has all the flavors that you might be familiar with, but the sour cream takes it up a notch and balances all of the ingredients to achieve perfect harmony,” she wrote.
