Summer is still in full swing, and there’s still plenty of time to soak in the sun and take advantage of all that fresh summer food and drink. One viral recipe is showing you how to make summer’s perfect lemonade.

Apparently, the trick to making perfect lemonade is crafting a base with lemon zest.

The recipe comes courtesy of content creator Carolina Gelen who creates a base of lemon zest, sugar, and fresh lemon juice.

To get started, you’ll zest three lemons and then combine the zest with 1/2 cup of sugar. The key here, though, is to use your fingers. Because the sugar is abrasive when you rub the sugar and zest together all the natural lemon oils are released. You’ll then add 1 1/2 cups of fresh lemon juice, and you’ve got the base for your lemonade.

Serve up your lemonade in a classic pitcher (and this one won't break by the pool).

You can store it in your fridge—Gelens uses a deli container—for later, or you can whip up a batch of lemonade immediately. To do so, simply add ice and water to the base to taste. You can customize just how strong you want your drink to be.

If you’re still savoring summer’s last few weeks, this lemonade recipe might just be perfect for a poolside party.
