The Secret to the Perfect Steak Might Also Give You a Jolt

If you’re a proficient griller, you probably already have your steak-cooking routine down. But there’s one pantry item you might want to incorporate in your marinating.

Recently, we introduced you to the sugar steak, a recipe that creates the perfect caramelized crust on the meat. Now, courtesy of The Kitchn, we’re bringing you a coffee-rubbed version.

The outlet’s latest steak recipe calls for rubbing the meat with ground coffee beans to bring out the flavor and create a similar caramelization to that of the sugar steak. When it’s cooking, you’ll also smell the coffee as it sears and creates a delicious crust on top of the steak.

And yes, this will work with any cut!

According to The Kitchn, the trick is to use fresh ground coffee beans, as this will give you the most “robust and nuanced flavor.” So, if you don’t have a coffee grinder, now’s the time to get one!

It’s not just the coffee beans, though; the rub also includes a few spices, like onion powder, coriander, and garlic, to give the flavor of the meat some depth.

After you combine all the ingredients, you just rub it all over the steaks. Then, let it sit at room temperature for 15 minutes or so. If you can, allow them to sit overnight, uncovered in the fridge. Then, just grill or cook them to your liking.
