
With tomato soup season (aka, fall) nearly here, it’s time to perfect that grilled cheese recipe. While you might believe getting the tastiest version is all about the bread or cooking it at just the right temp, some well-known cooks say a vegetable peeler is the real secret.
Huh? Don’t worry. No one’s asking you to slap some zucchini or other greens on your grilled cheese (unless you want to). You use the veggie peeler on the cheese.
Some people use shredded cheddar, American singles, or presliced cheese. But according to Molly Baz, recipe developer and cookbook author, the best grilled cheese is made from veggie-peeled block cheddar.
You’ll need a block of sharp cheddar and a y-shaped vegetable peeler. Use the peeler to cut thin strips of cheese from the block. Chase Brightwell from America’s Test Kitchen tried the hack and declared it a certified success.
He recommends keeping the slices of cheese the same length and thickness, so they’ll stay put inside the bread and heat evenly and thoroughly.
Next time you’re craving a grilled cheese and some tomato soup, be sure to grab the vegetable peeler.
