Sometimes, you just don’t know what to do with those leftovers from last night. Luckily, a new TikTok food craze will help you out whenever you’ve got some leftover salmon.

Emily Mariko’s deconstructed salmon roll video has gone viral on TikTok. If you love sushi, this is one lunchtime hack you should consider.

In the video, Mariko shreds some leftover salmon and adds some rice on top. Then, she places an ice cube in the rice and covers it with parchment before heating it up in the microwave. Doing so helps steam the rice and makes it taste as though you’ve just cooked it.

She then pours soy sauce, sriracha, and Kewpie mayo on top of the rice and mixes everything together. Next, she slices some avocado and places it on top before grabbing some kimchi and placing it on a separate plate.

Finally, she grabs some dried seaweed and, using chopsticks, sandwiches the mixture between the nori to create, essentially, a scrambled sushi roll.

Since the initial upload, Mariko’s video has racked up a whopping 33.2 million views and 3.6 million likes. While it’s her most popular upload to date, she’s been a social media influencer for a while and her feed is full of similar (highly viewed) food and recipe videos. She’s made everything from seriously impressive poké bowls to some truly delicious-looking salads.

If you’re on the hunt for new lunch recipes, Mariko’s TikTok is an excellent place to visit, but we’ve also got some awesome mason jar salad recipes, if we do say so ourselves.
